Overview – Red Meat UK (RMUK) Division
Kepak Red Meat UK (consisting of our two brands; St Merryn and McIntosh Donald), operates from three sites within the UK. St. Merryn site in Bodmin, Cornwall has the capacity to slaughter 1,500 cattle per week. St. Merryn in Merthyr Tydfil has combined beef and lamb processing and packing facilities, with the capacity to slaughter 20,000 lambs and 2,000 cattle per week while our second. McIntosh Donald, in Aberdeen has the capacity to slaughter 2,500 lambs and 1,800-2000 cattle per week. We have dedicated retail packing capabilities within our business and offer beef and lamb products ranging from retail ready cuts for butchers’ counters to branded packaged meat, all as part of our service.

Role Purpose
As a Quality Control Specialist in the Boning Hall at our Bodmin site, you will be an essential part of our food production operations. Your responsibilities will include working within the Boning Hall to ensure the efficient manufacture of meat products, strictly following quality and safety standards. You will play a key role in supporting the designated production area by verifying that all products meet customer specifications and comply with Standard Operating Procedures (SOPs). This position is physically demanding, requires keen attention to detail, and the capability to thrive in a fast-paced environment. It is ideal for individuals who are ambitious and eager to advance their career within the company.
Main Role Responsibilities and Requirements:
- Monitor and verify product to ensure compliance to relevant customer specifications through daily check lists, such as: temperature, contamination, labels, weight, packaging etc.
- Monitor and verify that all produced product is within the customer specifications/SOP’s, and within the limits and defined criteria set out in the relevant specifications, such as: weight, eye height, fat colour, dimensions, marbling etc.
- Identify and work with production to correct defects in products.
- Inform and guide production operatives on food safety and customer specifications.
- Collect product samples as required / instructed.
- Participate as required in internal and/or external audits.
- Maintain accurate and legible documented records.
- Report any risks or any evidence of unsafe or out of specification product, equipment, packaging or raw materials, to a designated manager to enable the resolution of issues requiring immediate action.
- Any other duties as requested by management and within the competency of the post holder.
Working Hours:
Monday to Friday
6:30 am to Production Finish
Pay:
Pay starts from £13.94 per hour and can rise up to £15.44 on competency based assessments.
Requirements
- Awareness of H.A.C.C.P principles / foundation level H.A.C.C.P is desirable.
- Level 2 certification in food hygiene for manufacturing desirable.
- Sound understanding of integrity and compliance to food safety and hygiene requirements
- Previous experience working in a high-volume meat processing factory highly beneficial
- Comprehensive understanding of customer specification
- Meticulous attention to detail essential
- Able to work in chilled environment
- Manual handling ability and awareness • Fluent English, communicate well in written and oral form with multi-nationals on all levels
- Consistent approach and strong work ethic with a commitment to good practice
